Leafy-Green Salad with Healthy Greek Dressing

Leafy Greens are amazing superfoods that are packed with nutrients. For instance, they are packed with vitamin C, A and K. They are also the best source of alkaline minerals, such as calcium and iron, and have many calming, and anti-stress properties. The enzymes contained in Leafy Greens act as catalysts for detoxification and the absorption of nutrients as well. The best part about leafy greens? They have the lowest calorie density and the highest concentration of healthy nutrients, so you when you eat them, you feel fuller with fewer calories. Nature is very generous with her wide offering of leafy greens. Keep in mind the following ones, and aim to include at least one, in at least one of your meals daily: Kale, Spinach, Microgreens, Cabbage, Watercress, Romaine Lettuce, Collard Greens, Bok Choy, Endive, and Arugula. Here is a simple salad recipe that will make you feel full, content and light:
  • 2 cups romaine lettuce, chopped
  • ½ cup cherry tomatoes, whole or halved
  • 3 to 6 ounces of grilled chicken or salmon, cubed
  • ¼ cup Kalamata olives, pitted
Greek salad dressing:
  • 1/2 cup low-fat Greek yogurt ⠀
  • 1 tablespoon of scallions, chopped ⠀
  • 2 teaspoons grated orange peel ⠀
  • 1 tablespoon mint leaf, finely chopped ⠀
  • Juice of 2 oranges ⠀
  • 1 tablespoon of lemon juice ⠀
  • Salt and pepper ⠀
Instructions:
  1. Combine all vegetables in a bowl
  2. Top with your desired protein.
  For the dressing:
  1. Place the Greek yogurt in a medium bowl.
  2. Add the scallions, orange peel, and mint leaves.
  3. Add the orange juice and lemon juice.
  4. Mix well.
  5. Add salt and pepper to taste.
  6. If the vinaigrette becomes too thick, add more juice.
  Spoon the dressing over your salad. Save the rest for later, in a sealed container in the fridge. Enjoy!
