Fennel, Apple and Orange Salad

WE EAT WITH OUR EYES FIRST Fortunately, fruits and vegetables are rich in colors, textures, and aromas (another sense that is deeply involved in eating), so it makes it pretty easy to present our meals beautifully with them… Just like this super simple Fennel-Apple-Orange salad. It is crunchy, slightly sweet, delicate… it has the acidic flavor of the orange, the spicy notes of cayenne pepper, and it is beautiful thing to see! Here’s how to make it: INGREDIENTS: For the Salad:
  • 1 fennel bulb⠀
  • 1 honeycrisp apple, cored and sliced ⠀
  • 1/2 red blood orange, segmented and chopped⠀
For the Vinaigrette:
  • 1 teaspoon extra virgin olive oil⠀
  • Juice of ½ orange ⠀
  • Marine salt to taste⠀
  • Cayenne pepper to taste⠀ ⠀
For the Garnish:
  1. With a vegetable peeler or paring knife, cut carefully some of the orange peel and roll it into a flower.
  2. Make the stem of the flower using fennel fronds.
Instructions:
  1. Slice and cut very finely the fennel and apple and add into a bowl. Add the segmented chopped oranges.
  2. In a separate bowl combine the orange juice, olive oil, salt and cayenne pepper. blend well and toss the vinaigrette into the chopped vegetables.
  3. Garnish with the orange peel and fennel fronds.
  4. Serve immediately.
