Beetroot + Cherry Tomatoes Salad

We promise this salad will surprise all of your senses! It is delicious, “crunchy”, it has the perfect balance of flavors and nutrients, and it is perfect to refresh a hot summer day! INGREDIENTS: For the salad:
  • 1 raw beetroot, peeled and cut into small squares ⠀
  • 1-pint cherry tomatoes, cut in half or quartered ⠀
  • ¼ cup crumbled goat cheese (you can substitute with feta cheese)
  • Finely cut mint leaves ⠀
  • Nuts, such as pine nuts, pistachios, or almonds (optional) ⠀
  For the vinaigrette:
  • Juice of 1 lemon, freshly squeezed
  • 1 Tablespoon of extra-virgin olive oil
  • 1 Tablespoon of balsamic vinegar of Modena
  • Salt and pepper to taste
  Instructions:
  1. Mix everything in a bowl.
  2. Stir so that the vegetables are well covered with the vinaigrette.
  3. Use a sprig of mint leaves to decorate.
  4. Serve immediately.
