We promise this salad will surprise all of your senses! It is delicious, “crunchy”, it has the perfect balance of flavors and nutrients, and it is perfect to refresh a hot summer day!
INGREDIENTS:
For the salad:
- 1 raw beetroot, peeled and cut into small squares ⠀
- 1-pint cherry tomatoes, cut in half or quartered ⠀
- ¼ cup crumbled goat cheese (you can substitute with feta cheese)
- Finely cut mint leaves ⠀
- Nuts, such as pine nuts, pistachios, or almonds (optional) ⠀
For the vinaigrette:
- Juice of 1 lemon, freshly squeezed
- 1 Tablespoon of extra-virgin olive oil
- 1 Tablespoon of balsamic vinegar of Modena
- Salt and pepper to taste
Instructions:
- Mix everything in a bowl.
- Stir so that the vegetables are well covered with the vinaigrette.
- Use a sprig of mint leaves to decorate.
- Serve immediately.
