Saying that
we ABSOLUTELY LOVE eggplants is an understatement. They are a
great source of fiber, aid digestion, help reduce inflammation, and support brain health. This Baba Ghanoush recipe is super easy and nutritious.
Ingredients:
- 1 Eggplant, halved lengthwise⠀
- 2 Garlic cloves, slivered⠀
- 1 Tablespoon Tahini (or 1 Tablespoon of sesame seeds, toasted and then crushed with 1
- Tablespoon olive oil)⠀
- 1-2 Tablespoon freshly squeezed lemon juice ⠀
- 1/2 teaspoon salt⠀
- 1 Tablespoon extra-virgin olive oil ⠀
- Pepper to taste⠀
- Sesame seeds (for garnish, optional)⠀
Instructions:
- Preheat oven to 425 F.
- Make small slits on the cut sides of the eggplant and press the garlics into the slits.
- Drizzle olive oil on the cut sides and transfer the eggplant halves, cut-side down, to a baking pan.
- Bake until soft, about 30-35 min.
- Set aside to cool.
- Scoop the eggplant flesh into a food processor or blender, add the tahini, lemon juice, salt, olive oil and pepper.
- Blend until smooth tasting, adjusting seasonings and/or adding more tahini if necessary.⠀
- Transfer to a bowl.
- Drizzle on top some extra virgin olive oil.
- Garnish with sesame seeds (optional).
- Serve with pita bread, casaba, or veggies.
